A Good and Simple Chicken Salad Recipe

It has been ages since I actually used a recipe that I found in a magazine. Often, I find that the creators of magazine recipes are trying to impress a specific market, and include ingredients that reflect the same, instead of just publishing a good recipe. For instance, star fruit crops up, as do a plethora of spices I have never required before. And, when I want to make something, I want it to be easy and economical. I do not want to have to buy a special baking tin, or a pricey bottle of what I consider an unusual choice of seasoning.

Anyway, I digress; I came across a sweet and simple chicken salad recipe that really hit the spot. All you need is 1 spoonful of Colemans powdered mustard, 1 spoonful of water and 2 spoonfuls of mayo for the dressing. Then, chop up pre-cooked chicken breast, cucumber, red pepper, mixed salad greens and some onions and presto. It is good stuff, and the price is in keeping with my liking.
